Course overview
Agricultural processors face food-safety risks that can originate at receiving, intensify during washing, drying, milling, fermentation, packing, or storage, and remain undetected until product has entered distribution. A generic hygiene checklist is not enough when raw-material variability, water quality, allergens, mycotoxins, pesticide residues, foreign material, and temperature abuse affect the process. This course equips food-safety personnel to build and defend a HACCP system that reflects the actual hazards, equipment, suppliers, and operating conditions in an agricultural processing facility.
Participants apply the Codex HACCP method from product description through verification and review. They learn to assemble a competent HACCP team; prepare process flow diagrams; conduct on-site flow confirmation; identify biological, chemical, physical, and allergen hazards; evaluate likelihood and severity; determine critical control points using a decision tree; establish critical limits; and design monitoring, corrective-action, verification, and record-control procedures. Particular attention is given to hazard controls for grains, fresh produce, pulses, spices, oils, dairy ingredients, animal feed, and other agricultural commodities.
Instruction combines facilitated technical sessions with a running processing-plant case study. Teams work with process maps, product specifications, supplier information, test results, sanitation records, and realistic deviation scenarios. Each participant leaves with a draft HACCP plan for a selected agricultural processing line, including hazard analysis, CCP decision records, monitoring forms, corrective-action procedures, verification schedule, and implementation priorities that can be adapted for their own site.
The course is designed for professionals who already work around food production, quality, operations, or compliance and need to move from managing isolated controls to operating a structured, auditable HACCP system. It is equally valuable for managers approving food-safety investments because it links control measures to product disposition, customer requirements, recall prevention, and evidence for regulatory or certification audits.

Requirements and prerequisites
Participants should have practical familiarity with an agricultural processing environment, including common process stages such as receiving, washing, drying, milling, packing, storage, or dispatch. They should understand basic food-safety terms such as contamination, sanitation, traceability, specifications, and corrective action, and be comfortable reading process flow diagrams and simple monitoring records. Experience with Microsoft Excel or equivalent spreadsheet software is useful for risk-ranking and plan templates. Prior formal HACCP certification, microbiology training, ISO 22000 experience, or advanced statistics is not required; the course teaches the HACCP method and its documentation structure in detail.
Training methodology
The programme uses instructor-led HACCP workshops anchored in a realistic agricultural processing case. Participants examine product specifications, supplier controls, process maps, environmental and laboratory data, and production records before making control decisions. Small groups complete hazard-analysis tables, apply a Codex decision tree, draft CCP monitoring forms, and respond to simulated deviations such as elevated moisture, failed metal detection, allergen cross-contact, or contaminated wash water. Facilitated peer review tests the rationale behind each decision. On day five, participants convert their draft plan into a site-specific implementation and review plan.

Day 1: HACCP foundations and process understanding
- Codex seven principles and twelve HACCP application steps
- Food-safety hazards in agricultural raw materials and processing environments
- Prerequisite programmes versus HACCP control measures
- HACCP team roles, competence requirements, and decision authority
- Product descriptions, intended use, and vulnerable consumer considerations
- Process flow diagram development from receipt to distribution
- On-site flow-diagram verification and process-walk evidence collection
Workshop: Teams create and verify a process flow diagram and product description for a selected grain, produce, spice, or pulse processing line.
Day 2: Hazard analysis for agricultural processing
- Biological hazards including Salmonella, Listeria, E. coli, and spoilage organisms
- Chemical hazards including pesticide residues, mycotoxins, cleaning chemicals, and lubricants
- Physical hazards including stones, glass, metal, plastic, and equipment fragments
- Allergen hazard identification and cross-contact pathways
- Raw-material supplier controls, certificates of analysis, and receiving specifications
- Likelihood-severity risk ranking and significant-hazard determination
- Control-measure selection using the hierarchy of preventive controls
Workshop: Participants complete a hazard-analysis worksheet for each process step and document the rationale for significant-hazard decisions.
Day 3: CCP selection and operational control design
- Codex decision-tree application for critical control point determination
- Distinguishing CCPs from operational prerequisite programmes
- Critical limits for time, temperature, moisture, water activity, pH, and detection systems
- Scientific validation sources for critical limits and process parameters
- Monitoring methods, frequency, responsible roles, and real-time recording

- CCP examples for washing, thermal processing, drying, sieving, and metal detection
Workshop: Teams use a Codex decision tree to classify controls and draft CCP monitoring procedures for two significant hazards.
Day 4: Corrective action, verification, and HACCP records

Day 5: Plan integration, review, and implementation

- Change management for new suppliers, products, equipment, and processing conditions
- HACCP review triggers following complaints, incidents, audits, and test failures
- Management review inputs and food-safety performance indicators

- Implementation planning, training responsibilities, and ownership of actions
Workshop: Each participant finalises a draft HACCP plan package and presents a 90-day implementation action register for peer and instructor review.
