Course overview
Postharvest losses, rejected loads, quality disputes, and late deliveries often arise between harvest and the buyer—not in the field. Produce may be harvested at the wrong maturity, held without shade, packed in unsuitable materials, exposed to temperature abuse, or dispatched without reliable volume and delivery planning. For agribusinesses, cooperatives, humanitarian supply programmes, and market-linkage projects, these failures reduce farmer income, weaken buyer confidence, and compromise food safety. This course equips participants to identify where loss, damage, and value deterioration occur across a specific commodity supply chain and to take practical corrective action.
Participants learn to map the farm-to-market flow from harvest scheduling through aggregation, grading, packing, storage, transport, receipt, and market handover. They work with maturity indices, commodity handling requirements, cold-chain principles, packhouse workflow, inventory rotation, quality inspection, route planning, and basic postharvest loss measurement. The course also covers food safety controls, traceability records, buyer specifications, transport contracting, and logistics performance measures. Participants gain the ability to create handling procedures that protect product quality while matching market demand, available infrastructure, and operating budgets.
Delivery combines instructor-led technical sessions with commodity-based cases, calculations, inspection simulations, and group planning workshops. Participants assess a realistic supply chain for fresh produce or another relevant agricultural commodity, identify critical loss points, and test improvements using handling, storage, and transport data. Each participant leaves with a practical Farm-to-Market Postharvest Improvement Plan containing a process map, risk register, handling SOP priorities, logistics actions, and performance indicators that can be adapted for their own operation or programme.
The course is designed for professionals who coordinate produce collection, quality, storage, transport, market access, or agricultural value-chain support and need a structured operational foundation rather than a crop-production course.

Requirements and prerequisites
Participants should have basic familiarity with agricultural production, commodity marketing, warehouse or transport operations, or value-chain projects. They should understand simple units such as kilograms, tonnes, percentages, delivery dates, and transport capacity, and be comfortable reading basic tables and completing calculations in Microsoft Excel. Experience with a specific crop is useful but not essential; course exercises can be adapted to horticulture, grains, pulses, roots and tubers, or other local commodities. No prior cold-chain qualification, laboratory training, HACCP certification, specialist logistics software, or engineering background is required.
Training methodology
The course uses short instructor-led sessions to establish technical principles, followed by hands-on work with commodity scenarios, temperature records, buyer specifications, packing calculations, and delivery schedules. Participants examine sample quality defects, map handling flows, calculate losses and usable yield, and make operational decisions under realistic constraints such as limited cold storage, variable harvest volumes, and long transport routes. Small groups develop controls for a case supply chain, then receive facilitator feedback while refining an individual end-of-course application plan for their own commodity or operation.

Day 1: Postharvest systems and loss diagnosis

Day 2: Harvest, handling, grading, and packing operations

- Packhouse layout for receiving, washing, sorting, grading, packing, and dispatch
- Buyer grade standards, size classification, defect tolerances, and acceptance criteria
- Sampling plans and visual quality inspection procedures
- Packaging selection by commodity, journey length, stacking strength, and ventilation

- Standard operating procedures for hygiene, sanitation, and equipment cleaning

Day 3: Storage, cold chain, and inventory control

Day 4: Transport and market delivery logistics

- Aggregation centre scheduling and loading sequence design
- Vehicle selection, capacity calculation, palletisation, and load securing
- Route planning using travel time, road conditions, delivery windows, and fuel constraints
- Cold-chain handover points and vehicle temperature verification
- Transporter contracts, service-level expectations, and proof-of-delivery records
- Delivery KPIs including on-time-in-full, damage rate, rejection rate, and turnaround time
Workshop: Participants build a dispatch plan for multiple collection points and produce a vehicle loading, route, and delivery schedule.
Day 5: Operational improvement and implementation planning
